Meat Science Laboratory
The Meat Science Laboratory, established in 1982, is housed on the site of the former Large Animal Clinic. [1] [2]
Bidding for the Large Animal Clinic, originally known only as the Veterinary Clinic Building, opened on August 20, 1954, with original bids coming in at $712,248 to an appropriation of $586,000, which the Board rejected on September 29. Bidding began again on October 12, and only one bid, from Kuhne-Simmons Co. for $432,416, was received. The Board formally accepted the bid and authorized construction on October 27, 1954, with the building to be completed no later than September 1, 1955. [3]
The building was officially named as the Veterinary Medicine Large Animal Clinic in 1955. [4] It is outfitted with facilities to conduct and analyze the entire meat lifecycle, from initial slaughter of swine and cattle, to meat preparation, storage, and eventual sale. The facility even includes a computer-controlled smokehouse used to flavor meat that is sold every Thursday and Friday. [5]
