The Effect of Simulated Gastrointestinal Digestion on Proteins from Seven Soy Genotypes

Mumford Hall This ACES James Scholar researched seven soy genotypes. These soy genotypes were hydrolyzed and analyzed for protein contents, peptide sizes and specific types of protein components, such as Bowman-Birk Inhibitor and Lunasin. This analysis was then used to further support research on the bio-activity of soy peptides against Leukemia cancer cells. ACES James Scholar project presented by Pauline Ie (Jakarta, Indonesia).
