Come find out what’s really in that bag of chips and liter of soda, while learning how to assess and improve your own health. Impact of Soy Isoflavones on Piglet Immune Development and Function First Floor, Bevier Hall See research results from a project titled “Impact of Soy Isoflavones on Piglet Immune Development and Function” under Dr. Sharon Donovan in Food Science and Human Nutrition. An ACES James Scholar project presented by Sarah Taylor (Mount Prospect, IL). Impact of heel ultrasound information education on calcium intake First Floor, Bevier Hall Come learn more about an osteoporosis prevention program and its effects on calcium intake. The program composition, results, and research paper will be on display. ExplorACES visitors can have their frame size measured to discover risk factors for osteoporosis. An ACES James Scholar project presented by Sheena Patel (Schaumburg, IL). Powerful Papaya First Floor, Bevier Hall Papaya fruit provides multiple health benefits, however, dramatic limitations exist in distributing the fruit. Thus, there is a need to develop an acceptable processed papaya product. This research was conducted to do just that! An ACES James Scholar project presented by Cassie Turzy (Antioch, IL).

The effects of colostrum on proglucagon expression by STC-1 enteroendocrine cells First Floor, Bevier Hall Discover how colostrum, found in breast milk, promotes intestinal growth. Proglucagon mRNA codes for GLP-2, an intestinal hormone which is trophic to the intestine. This project examines the effects of colostrum on proglucagon mRNA abundance in STC-1 enteroendocrine cells. Prevention of Overweight Children Enrolled in the Head Start Program Through Nutrition Education Directed at Teachers and Parents First Floor, Bevier Hall Learn about this undergraduate project aimed at the development of nutrition education materials.These materials present healthy food choices and physical activities in a child- and parent-friendly format utilizing different digital media resources. An ACES James Scholar project presented by Chelsea Wood (Mahomet, IL).
