Mix and sift the dry ingredients. Add slowly the milk with beaten egg. then the hominy. yVy on hot griddle.

HOMINY M U F F I N S 4 tablespoons fat 4 tablespoons sugar 1% cups flour 1 cup hominy 1 egg 1 cup milk 1 o teaspoons baking powder % teaspoon salt

Cream butter and sugar, add beaten egg and salt. Add alternately flour, sifted with baking powder, and milk, then hominy ground with coarse knife of meat grinder. Bake in buttered iron muffin pans for thirty-five minutes.
