Put hominy thru a meat grinder using a coarse knife. Mix homin with thick white sauce (see below) and other ingredients; use salt or sugar, depending on whether or not a sweet croquette is desired. Chill mixture and shape into balls. Roll in fine bread or cracker crumbs, then in egg, then crumbs again, and fry in deep fat till brown. May be served with jelly.

HOMINY CROQUETTES I I

2 cups hominy % cup thick white sauce 5/3 cup grated cheese V2 teaspoon salt Pepper, paprika

Mix hominy, whifth has been put through a meat grinder, with white sauce, cheese, and seasoning to such a consistency that it can be moulded or shaped. Chill, shape into croquettes, roll in fine bread or cracker crumbs, then in eggy then crumbs again, and fry in deep fat till brown.

HOMINY CROQUETTES I I P 2 cups chopped hominy 2 tablespoons melted butter Speck of cayenne pepper 1 egg, slightly beaten Few drops onion juice 1 tablespoon minced parsley

Mix all the ingredients together, shape mixture into balls or cylinders. Roll in sifted bread crumbs, then in egg, then in crumbs again. Fry in deep fat until brown. Serve with tomato or cheese sauce. add one tablesnoon water to essr and slightly.

WHITE SAUCE FOR CROQUETTE MIXTURES

4 tablespoons % teaspoon salt flour Pepper 2 tablespoons butter 1 cup milk

Melt butter, add flour and salt; cook together, then add hot milk alowly. Cook till thick, cool, and use for binding croquettes.
